Method

Sauté the Veggies
  1. Warm olive oil in a large pot over medium heat. Add mushrooms, eggplant, zucchini, onion, and salt. Stir until veggies are golden, about 8 to 12 minutes.
Add Garlic and Spinach
  1. Add minced garlic to the pot and cook for 1 minute. Stir in spinach until wilted, about 3 minutes.
Create the Sauce
  1. Pour in chopped tomatoes and add red pepper flakes, salt, and pepper. Simmer covered for 20 minutes, stirring occasionally.
Preheat Your Oven
  1. Preheat oven to 350℉ (175℃).
Assemble the Lasagna
  1. Start by pouring a portion of tomato mixture at the bottom of a baking dish. Layer 3-4 lasagna noodles lengthwise.
Layering the Cheese
  1. Spread 1/3 of the ricotta over the sauce, then sprinkle 1/3 of the mozzarella. Repeat layering until the top layer has noodles.
Final Layer
  1. Spread remaining sauce over last layer of noodles and top with remaining mozzarella.
Bake to Perfection
  1. Bake for 20 to 30 minutes, broiling on low for 3-5 minutes for a golden top.
Garnish and Serve
  1. Sprinkle fresh basil on top and let set for 10 minutes. Cut into 9 or 12 slices and serve.

Notes

Consider adding sautéed bell peppers or corn to the vegetable mix for extra flavor. It's best to let the lasagna rest longer for enhanced flavor melding.
