Ingredients
Method
Sauté the Veggies
- Warm olive oil in a large pot over medium heat. Add mushrooms, eggplant, zucchini, onion, and salt. Stir until veggies are golden, about 8 to 12 minutes.
Add Garlic and Spinach
- Add minced garlic to the pot and cook for 1 minute. Stir in spinach until wilted, about 3 minutes.
Create the Sauce
- Pour in chopped tomatoes and add red pepper flakes, salt, and pepper. Simmer covered for 20 minutes, stirring occasionally.
Preheat Your Oven
- Preheat oven to 350℉ (175℃).
Assemble the Lasagna
- Start by pouring a portion of tomato mixture at the bottom of a baking dish. Layer 3-4 lasagna noodles lengthwise.
Layering the Cheese
- Spread 1/3 of the ricotta over the sauce, then sprinkle 1/3 of the mozzarella. Repeat layering until the top layer has noodles.
Final Layer
- Spread remaining sauce over last layer of noodles and top with remaining mozzarella.
Bake to Perfection
- Bake for 20 to 30 minutes, broiling on low for 3-5 minutes for a golden top.
Garnish and Serve
- Sprinkle fresh basil on top and let set for 10 minutes. Cut into 9 or 12 slices and serve.
Notes
Consider adding sautéed bell peppers or corn to the vegetable mix for extra flavor. It's best to let the lasagna rest longer for enhanced flavor melding.
